The Etna Bianco wine "Contrada Calderara" by Cottanera is a product that comes from the slopes of the majestic Sicilian volcano, characterized by varied aromas on the nose and a body that reveals itself on the palate. This distinctive personality also partly derives from the aging process, carried out, for a good part of the mass, in wood, a choice that proves to be more than successful during tasting, giving rise to a full and decidedly round sip.
The "Contrada Calderara" Etna Bianco is born from the pure use by Cottanera of an indigenous Sicilian grape variety, Carricante. The vines of this variety, whose age is around 45 years, grow in a typically volcanic soil, at about 750 meters above sea level, in the vineyards of the contrada that gives its name to the label, Calderara. The must, after pressing, undergoes a cryomaceration for 24 hours, and then decants statically; fermentation occurs both in French oak tonneaux – for 40% of the total mass – and in tanks of cement, for the remaining 60%. This differentiation continues, maintaining the same proportions, during the aging phase, in which the wine remains on the fine lees to rest for 12 months.
This Etna Bianco "Contrada Calderara" presents itself to the eye with a bright straw yellow color. The olfactory spectrum revolves around subtle and layered scents, where mineral nuances open up to notes of sweet spices, flowers, and white-fleshed fruit. On the palate, it has excellent structure, with a broad and enveloping sip that moves on a flavor that is in perfect balance with the notes already perceived during the olfactory examination. A bottle with which Cottanera, now a well-known and established name in the production of Etna wines, reaches interesting quality levels, not only in Italy but also abroad.
