Sardinian wine Capichera Vendemmia Tardiva branded Capichera is a white in which Vermentino is processed with a particularity. The grapes are indeed harvested late, when each bunch is full of sugars and olfactory components, giving greater complexity to the final product. The winery therefore interprets the varietal with a guise that deviates from the classic style with which it is usually presented, elevating it to a higher level of expressiveness. A label that also has a clear territorial stamp, where a hint of the Mediterranean scrub that characterizes the island landscape is sensed in the nose, transporting us sip after sip into Gallura.
This Capichera Vendemmia Tardiva Capichera is made from Vermentino grapes – a varietal among the most widespread at the regional level - used in purity. The vines grow in plots located near Arzachena, and the harvest is carried out late, selecting only the qualitatively perfect bunches. The must obtained from pressing the grapes ferments in steel tanks at a controlled temperature of 16-18 degrees for fourweeks. The wine is then transferred into oak barriques for a total of 4 months, at the end of which it is bottled and put on the market.
The Capichera Vendemmia Tardiva Capichera reveals itself to the eye with a straw yellow color, slightly tending more towards gold at the rim. Interesting is the breadth of the aromatic spectrum offered to the nose, where floral notes alternate with touches of lavender and hints of Mediterranean scrub. Warm is the entry on the palate, where a wide and round sip opens to a mineral and citrus taste. It closes with a long and caressing finish, of good palate persistence, capable of pairing perfectly at the end of the meal with desserts, but also with a varied platter of semi-aged goat cheeses.
